4 MILLIONNAIRES anchovy fillets
½ lb. (250 g) unsalted butter, soft
1 tsp. (5 ml) chopped chives
¼ tsp. (1 ml) lemon juice
Fresh ground pepper
Drain anchovies and pat dry with paper towel.
Place fillets in mortar; mash with pestle.
Add butter and mix together well with spoon.
Place mixture in fine sieve and force through using pestle.
Add chives, lemon juice and pepper to taste.
Mix thoroughly and refrigerate until use.
This butter is delicious on almost any steak.
